#22dayveganchallenge: The Last Day!

Earlier this month, Beyonce + Jay-Z announced their goal to complete a #22dayVEGANchallenge. Jay-Z says that he and B are shooting for 22 days because he says it takes at least 22 days to break into a new routine and feel results. For all of you who wanted to join in on the vegan party, or are continuing your challenge for a healthy and happy New Year (especially after seeing Beyonce's ab pictures all over instagram)--- this is the perfect menu. Young's has created a super easy cocktail menu that you can make for your New Year's Party!

DESTINY’S CHAMPAGNE SHOTS

{aranciata soda, cointreau, champagne}

+ For each 2.5 oz shot glass: pour .5oz cointreau (or any other orange liquor), 1oz aranciata soda and top with champagne

HOLY KALE SPOONS

{kale, concord grape, peanut}

 + To make 15-20 spoons

  • 1 bunch kale, cut into thin, chiffonade strips 
  • 1 bag of concord or red grapes cut into 1/4
  • for the dressing, combine 3 tbsp peanut butter, 1 TbSp olive oil, 2 tbsp mirin (rice wine vinegar) or apple cider vinegar, 1 tsp salt, 1 tsp black pepper, 2 Tbsp water and whisk together.
  • 1/2 cup of chopped, roasted peanut for garnish

To Assemble: layer all of the cleaned and cut kale into asian soup spoons, top with grapes and chopped peanuts. When ready for your party, drizzle the peanut dressing over the spoons and serve!

SURVIVOR TARTARE

{tomato, basil, cashew}

 + for 15-20 mini tartares

  • 4 red tomatoes, cut into small dice
  • 4 yellow tomatoes, cut into small dice
  • 2 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tsp sea salt
  • 1tsp black pepper
  • fresh basil, cut into fine chiffonade strips
  • 1/4 cup finely chopped cashews

In a small mixing bowl, mix together the tomatoes, olive oil, vinegar, salt and pepper. Use a small ring mold or a ring made out of tin foil to form the mini tartares. top with fresh basil and cashew to serve.

EMPIRE STATE POPCORN

{truffle oil, local corn, sea salt}

 + for 30 mini cones

  • 1/8 cup truffle oil
  • 2 tsp sea salt
  • 1 tsp black pepper
  • your favorite bag of plain, organic popcorn (popped of course)

In a small mixing bowl, whisk together the truffle oil, salt and pepper. Toss in your favorite bag of popcorn while it it still hot and serve immediately!

TOM FORD TRUFFLES

{cocoa, tofu, chili}

+ makes 50 truffles

  • 8oz vegan dark chocolate, cut down and melted in microwave for 2 min, stir every 30 seconds
  • 14oz soft tofu
  • 1/2 tsp vanilla extract
  • 3 tbsp agave or maple syrup 
  • mix of 1 cup cocoa powder and 2 tsp chili powder

n a food processor, blend the chocolate, tofu, vanilla and sweetener. Transfer to a small mixing bowl, cover and refrigerate to cool 30 minutes, until the mixture is cool and solid. Use a 1.5" mini ice cream scoop to portion and roll out 50 truffles. Roll into topping, refrigerate until ready to serve. 

(these babies have only 35 calories/truffle. Way to ring in a healthy, decadent new year!)
